How we do it

Supply chain

Our carefully constructed supply chain consists of hand-selected local supplier and 80% of our ingredients are sourced within a 50-mile radius of our venues. We have a great love affair with local seasonal produce and Executive Chef, Adrian Booth and his culinary team are passionate about our sustainable farm to fork approach and proud to work with a diverse range of local, independent farms and producers.

 

Local, fresh and seasonal

We always aim to give our clients and customers 100% confidence in the food and event experiences that we create by openly demonstrating how we grow, source, produce, craft, operate, manage and deliver them. We have a great love affair with local seasonal produce and our chefs are passionate about our sustainable farm to fork approach and proud to work with a diverse range of great British suppliers, farms and produce.

 

 

Fish and seafood

Our fish and seafood are demonstrably sustainable. Our chefs as far south as Brighton and Chichester, across the East of England to Folkestone, up through Essex, across Suffolk in to Bury St Edmunds, and up to Scarborough all receive fresh fish from British markets. Our trusted suppliers source fresh fish and seafood from Lowestoft, Newhaven, Brixham and Peterhead in Scotland in order to offer a full range of British caught species as well as local producers including Chalk Stream trout and Loch Duart smoked salmon. We only buy fish and seafood that have been sourced from fisheries meeting the Marine Stewardship Council Fisheries Standard and we never buy ‘red list’ or endangered fish from the Marine Conservation Society’s Good Fish Guide. Finally, all our wild fish meet the FAO Code of Conduct for Responsible Fisheries.

 

Meat

Our chefs source outstanding quality UK meat from high quality farms with Red Tractor Farm Assured welfare standards; including Dingley Dell pork, Creedy Carver duck and chicken, Lincoln Red beef, Trenchmore beef and Ben Rigby game. Our suppliers are recognised for their master butchery skills and unrivalled sustainable meat products. They never compromise on quality and use traditional British breeds with today’s farming methods. Their meat provenance is beyond compare, carefully selecting farms with local pastures around the country.

 

Eggs

We educate our kitchen teams in fresh food production to encourage the use of sustainable produce such as the use of free-range cage-free eggs from British farms. Consequently all of our eggs are 100% British free-range eggs.

 

 

Fruit and vegetables

90% of our seasonal fruit and vegetables are sourced from around the UK. Furthermore, up to 10 tonnes of produce is rejected every week in the UK because of its imperfection which can end up in landfill. We educate our chefs to support local farmers and with some creativity and planning, incorporate the rejected veg into our soups, stocks and salads. We partner with Fisher and Woods who supply a selection of ’ugly’ fruit and vegetables that may not look perfect but taste great.

 

 

 

Beer, wines and spirits

We are able to source world-famous whisky distillers, small artisan gin producers as well as leading and  local craft beers. We curate carefully sourced wine lists and our tempting drinks lists are available in no short measure, from good quality house wine to the most finest.  We also have an extensive selection of craft beers, ales and ciders that we provide to our clients and customers alike.

 

 

English sparkling wine

Digby Fine English launched its first wines for sale in 2013 in Selfridges, won its first trophy in 2014 and has gone on to great adventures around the world in the years since then. Their winemaking ethos is to let each parcel of fruit from each vineyard shine in all its individual glory, with as little intervention as possible. It is a bold and exuberant modern brand of luxury English sparkling wine and they are seeking to do nothing less than create the new global standard in excellence for fizz.

Coffee

We are passionate about all things coffee and we care deeply about where our coffee is sourced and roasted, just as much as our customers. We care as much about where the beans are sourced from and how the growers are treated as we do about the quality of our artisan coffee. Our carefully curated list of sustainable coffee roasters is constantly evolving as we identify local independents from around the communities who are passionate and always focused on flavour and quality. All of our coffee for our London venues is roasted locally in Peckham at Old Spike Roastery and their speciality grade green coffee beans are sourced from countries of origin based on the principles of direct trade, quality and seasonality. Old Spike focuses on direct trade, seasonality and quality. Their high-quality coffee means a better price for the farmer which secures them a higher price, often 4 to 5 times higher than the Fairtrade minimum.

 

Tea

Our premium tea products are organic-certified and fairtrade-certified and sourced and purchased on fair terms. Farmers and workers benefit from this with improved working conditions, training in how to improve the way they farm and manage their environment, and the opportunity to improve healthcare. Our teas are made in a way that is better for people, animals and wildlife, and respects the natural environment.

 

Mineral water

We sell a lot of mineral water every year so choosing the right sustainable bottled water partner is a big responsibility. Life Water is the British water brand, with a conscience.
